I am having thanksgiving dinner tonight and it is my first time…

I wasn’t able to get the turkey in time to soak it in a brine.

I put apple, cinnamon stick, onion in hot vegetable broth to steep. I put the bird on a roasting rack, then stuffed with the apple and onion, as well as fresh sage, rosemary, time. I put a few slabs of butter underneath the skin and covered the bird with olive oil. The recipe I was looking at said not to cover with tin foil but this seemed weird to me.

It’s been in the oven about 10 minutes, but I’m getting nervous it’s not going to come out very good.

Let me know if I should change what I’m doing…! Thanks!

    Blast that bird at 500 degrees for 30 minutes, then down to 350 until it reaches an internal temp of 161 in the white meat.

    Cover the breast with foil (a triangle) AFTER the first major heat to prevent the white meat from drying out.

    If you find the skin is browning too fast and you juices are drying up, cover it until the last hour or so of baking time. (you should of tried adding cranberries) in the can but drained)and walnuts in with the apples! it adds a real nice flavor!
